Best Potato Soup

Ingredients
  •  12 Strips Bacon, cooked

  • 3/4 Teaspoon Salt

  • 1/2 Teaspoon Pepper

  • 2 Cup Chicken Broth

  • 4 Large-Sized Potatoes cooled, peeled and cubed

  • 2/3 Cup Butter

  • 2/3 Cup Flour

  • 6 Cups Milk

  • 1 large onion or 4 Green onions, thinly sliced

  • 1 1/4 Cups Shredded mild cheddar cheese

  • 1 Cup Sour cream

 
Directions
  • On a 6 quart Instant Pot, select the Saute setting. Add the bacon and cook until crisp, stirring often. Remove the bacon to a paper towel. Pour off the fat. Add the yellow onion and cook for 2 minutes, stirring occasionally. Add the garlic and cook and stir for 30 seconds. Press Cancel.

  • Put into another bowl set aside Add the potatoes and broth. Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 6 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes). When done, press Cancel and use the quick release method to release the pressure.

  • In a instant pot® or stockpot over low heat, melt butter. Stir in flour, stir until smooth and bubbly.

  • Gradually add milk, stirring constantly, until sauce has thickened. Add potatoes and onions. Continue to cook, stirring constantly, until soup begins to bubble.

  • Reduce heat, simmer gently for 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve baked potato soup immediately.

Smoothies

APPLE STRUDEL SHAKE

Ingredients

  • 1 serving Whey protein powder

  • 1/3 cup apple choped, peel on

  • 1/2 cup unsweetened, plail almond milk

  • 1/2 cup canned full-fat coconut milk

  • 4 ice cubes

  • 2 teaspoons stevia

  • 1/2 teaspoon cinnamon

  • 2 Tablespoon chopped walnut

  • 1/2 teaspoon vanilla extract

  • pinch of ground clove or pumpkin pie spice (optional)

Instructions

Place all ingredients in the blender and add additional water to create desired consistency. Process until smooth. Serve immediately.

CHOCOLATE CASHEW CRUNCH SHAKE

Ingredients

  • 1 serving Whey protein powder

  • 1/2 cup canned full-fat coconut milk

  • 1 Tablespoon unsweetened cocoa power

  • 4 ice cubes

  • 1/3 cup blueberries

  • 1 Tablespoon ground flax or chia seeds

  • 2 teaspoons stevia

Instructions

Place all ingredients in the blender and add additional water to create desired consistency. Process until smooth. Serve immediately.

CHERRY AMARETTO SHAKE

Ingredients

  • 1 serving Whey protein powder

  • 1/2 cup unsweetened, plain almond milk

  • 1/2 cup canned full fat coconut milk

  • 4 ice cubes

  • 1/4 cup cherries fresh or frozen

  • 1 Tablespoon ground flex seed

  • 1/4 cup baby spinach leaves

  • 2 teaspoons stevia

  • 1/4 teaspoon almond extract

  • 2 Tablespoon almonds, chopped

Instructions

Place all ingredients in the blender and add additional water to create desired consistency. Process until smooth. Serve immediately.

PAPAYA SMOOTHIES

Ingredients

  • 1/2 cup of frozen tropical fruit (such as papaya, pineapple and mango

  • 1 cup vanilla yogurt

  • 1/2 cup orange juice

Instructions

Add all the ingredients into blender. Process until smooth. Serve immediately. Serves 2

(we added pineapple & strawberries YUM!)

HOT CHOCOLATES

  • 4 Servings

  • 4 cups milk

  • 4 cups powered sugar

  • 2 cups coco

  • 2 teaspoons salt

  • 2 cups candy canes (crushed)

  • 2 cups candies (Andes mint, chopped)

  • 1 cup mini marshmallows

Instructions

In a Instant Pot select the Saute setting heat milk until just below simmering point (it should be hot and steamy but not boiling). Remove from heat and add coco, power sugar Let stand for 1 minute, then add candy canes, Andes , marshmallows and whisk vigorously. Reheat put it on warm (don’t let it boil!) just until chocolate has completely melted and mixture is smooth. Pour into glasses and serve immediately. Alternatively, you can make this a few hours ahead of time and rewarm in the Instant Pot on Saute just before serving.

Garnish with  whipped cream, grated chocolate, or cocoa.

TACO SOUP

Ingredients

 

  • 1 can (15 oz.) black beans•

  • 1 can (15 oz.) pinto beans•

  • 1 can (14.5 oz.)  diced tomatoes

  • 1 can (15 oz.) sweet corn •

  • 1 can (12.5 oz.) chicken breast flaked

  • 1 jar (16 oz.) salsa verda (the green one)

  • 1 can (4.5 oz)green chilis

  • 1 bunch cilantro chopped

  • 1 teaspoon cumin or to taste

  • 1 teaspoon chili powder or to taste

Toppings:

• Shredded cheese

• Tortilla chips

• sour cream

Directions

Step 1

To begin, combine all the ingredients into a Instant Pot. Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 5 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes). When done, press Cancel and use the quick release method to release the pressure.

 

Step 2

 

Serve warm with shredded cheese, tortilla chips, and sour cream, if desired.

Ingredients

  • 1 cup cabbage sliced

  • 1 cup celery sliced

  • 1cup broccoli cut into bit sizes

  • 1cup mushrooms sliced

  • 1cup cauliflower bit sizes

  • 1cup zucchini

  • 1cup carrotspeeled, halved lengthwise, and sliced

  • 1cup spinach

  • 1cup green or red pepper cut into strips

  • 1cup onions slivers

  • 4cups (32oz) broth (chicken, veggie, bone...) or you can use bouillon cube (1teaspoon or cube & 8oz of water for every cup of broth)

  • 1clove of garlic minced

  • 1/4 teaspoon salt

Directions

Step 1

Cut all vegetables and set aside.

Step 2

Set on SAUTE mode and pour in the1/2 cup of broth.

Add in the diced onion, carrots, and celery and mix until combined.

Saute for a few minutes or until the vegetables become soft, about 2 minutes.

Stir in the minced garlic.

Add in the cabbage, green peppers, broccoli, cauliflower, mushrooms, zucchini, spinach, broth, and salt & pepper stirring to combine.

Lock the lid in place and close the stem vent.

Set on MANUAL or PRESSURE COOK on HIGH PRESSURE for 4 minutes.

Allow the Instant pot to natural release for 5 minutes once timer goes off.

Remove lid and stir to combine.
